How important is the kitchen for a successful outcome? How far can one go to ensure the quality of the cuisine? What are the limits in preparing resources so that a high-quality culinary result is achieved?
Our family has always produced fine food and cooking is tied to many of our personal memories - experiencing unique flavours in your mouth and in your mind upon tasting something new; feeling joy for an old favourite like boiled beef (Tafelspitz); memories of cooks who once worked for us and their unforgettable, best-loved dishes; covered apple pie; the savoy cabbage that was so wonderful; the fresh spinach served with just onions, salt and pepper; corn on the cob, pure and simply grilled, because there was never much time for us kids; and always fresh potatoes, fresh salad and lots of love. Always busy hands at work. Ideally we aim to get back to the simplicity of taste and smell and feel. We are striving towards that goal and the kitchen remains as it always was: the most beloved place in the entire hotel.
Home is where the food tastes good
Regional cuisine and Tyrolean specialties which have been brought up to date and 'lightened' without losing their roots. The successful interplay of traditional yet modern is continued in the kitchen – time-honoured dishes which have been given a modern interpretation. The motto we live by at the hotel - tie in the old with the new - holds true for our kitchen as well!
Southern cuisine
The Mediterranean cuisine of Italy is simply an attitude to life. The variety of fresh, light and healthy products makes your heart leap, and everything is left in its most natural form as far as possible while cooking. Balsamic vinegar and the finest olive oil and pasta are essential elements of our kitchen.
Healthy cuisine
Crisp salads and fresh vegetables have a place in our cuisine year-round, always in innovative and tasty variations. Seasonal cuisine, vital and fresh, and a determination to use organic ingredients wherever possible characterise the state of our kitchen. Quality organic products are becoming more and more the norm – the breakfast buffet has already become completely organic, and meat and local fish from organic farms is labelled as such. The Juffing cuisine is both energy-rich and a fountain of life: enjoy light, healthy and vitamin-rich dishes, discover unexpected flavour combinations and old favourites in a new way.
